Quick kiddy griddle pan waffles

 
For the days when you want to be a kid again, here's my quick griddle pan waffles recipe – whip them up in under 20 minutes.

Forget about the council tax and negotiating your TV Sky package, tonight you're going to have chicken nuggets, potato smiles and beans for tea, followed by my fun waffle pud. 

And if you've got kids, get them involved too, this treat is really easy to make.

 

All you need (makes 4 large waffles)
Waffles
2 eggs
300ml semi-skimmed milk
100g unsalted butte, softened (plus a bit more for greasing pan)
225g self-raising flour
100g caster sugar
2tsp baking powder
1/4tsp salt

Nutella sauce (per waffle)
1 heaped tbsp of chocolate spread (I used Nutella)
1 heaped tbsp of double cream
Optional, crispy M&Ms

Method
Waffles
1). Crack your eggs into your bowl of milk and whisk
2). Sift in all your dry ingredients
3). Add butter gradually until smooth (try not to overwork the mix)
4). Place your griddle pan on a high heat and add leftover butter until melted
5). Using a ladle add a dollop of waffle mix to the pan and cook for 6 mins (or until lightly golden) and then flip for another 6 mins
6). Once cooked, cook both sides for another couple of minutes to crisp up 
7). Serve

Nutella sauce
1). Melt nutella for 10 seconds in microwave or until liquid
2). Mix in double cream until smooth
3). Add to waffles with your M&Ms and serve
